Homemade burrito bowls πŸ₯™

One of my “goals” from my last post https://galsgoss.com/2017/01/06/new-year-new-me-booshit/ was to get back on my gym & food commitment 100%….

Now I’ve had a good weekend we will just leave it at that, but I’ve got my alarm set for a 6am gym sesh before work and I’ve made my lunches for the week. 

I can’t take credit for this idea as I seen it on one of them lil foodie videos on Facebook? But I thought I’d share with you what I used and what I done…

  • 3 chicken fillets
  • A mixture of peppers
  • 1 red onion
  • 1 tin of sweetcorn 
  • 1 tin of chopped tomatoes 
  • 1 tin of mixed taco beans 
  • 2 boil in the bag rices 
  • Grated cheese
  • Salt & pepper 
  • Paprika 

*Preheat your oven and boil your rice.*

put the 3 chicken fillets in the centre of a baking tray covered in tin foil. Cut your peppers and onions and place ether side of the chicken. Drizzle coconut oil, salt & pepper and paprika over everything. Place half your tin of chopped tomatoes on the chicken. 


While you cook the chicken for 25 mins pop the rest of the ingredients in your containers or lunch boxes or whatever your using. Divide the rice between them all and each of your tins, the rest of the tomatoes and cheese evenly. Once your chicken and veg is cooked slice your chicken and pop everything else amongst your lunches! Season & you’re done!


This took like 40 mins in all and I’m super excited to try it I think it looks tasty!

Gals gourmet chicken πŸ—

To be honest there’s nothing overly “gourmet” or original about this, but the title sounds good and really that’s the main thing.

I haven’t had an awful amount of time to be thinking of new food recipes recently so apologies; I thought this one was tasty and easy to do so why not share! 

What you need


  • Chicken fillets (however many you desire)
  • Mozzarella
  • Mushrooms
  • Onions
  • Peppers
  • Chorizo
  • Tomatoes

This is one of them dishes you can add or subtract any of the above to your taste!

What to do

Slice a little pocket into each chicken fillet & fill with the mozzarella! I just used all of the cheese amongst my 3 fillets mainly because it doesn’t keep great.

I then placed a cocktail stick through the chicken breast and chopped up all my ingredients and placed on top of each. I seasoned with salt, pepper & a sprinkle of garlic.


I cooked in a dish with tinfoil wrapped over the top for 20-30 mins, just checking on them throughout. 

I served mine with these little homemade chips. Baby potatoes cut into wedges and cooked in the actifry with coconut oil, salt and pepper.

And there you have it; Monday night dinner complete!
